The Pink House Makes West Cornwall Feel Like a Dinner Destination

The Pink House is the kind of restaurant that changes the rhythm of a small town. The project brings together chef Gabe McMackin, creative director and partner Marina Muñoz, manager Michael Regan and executive chef Cedric Durand. McMackin’s background includes Blue Hill at Stone Barns, Gramercy Tavern, Roberta’s and his former Brooklyn restaurant The Finch, while Durand trained in France and worked at restaurants including Le Gratin under Daniel Boulud. Their experience is impressive, but The Pink House is designed to feel welcoming rather than ceremonial.

The menu’s guiding idea is elegant simplicity: let excellent seasonal ingredients carry the dish. A roasted steelhead trout with baby leeks and chanterelles earned particular praise from CT Insider, which also singled out the restaurant’s soup. The beverage program offers its own local touch, including Connecticut beers, while a persimmon margarita gives the drinks list a bright, memorable accent.

Just as important is the room’s hospitality. Litchfield Magazine’s 2026 profile of Muñoz describes a hands-on host who moves through the dining room, talks with guests and helps create the feeling of a dinner party rather than a transaction. The restaurant has also worked with the Cornwall Library and local artists and musicians, reinforcing its role as a gathering place in a community with a strong creative identity.

The Pink House is worth visiting when you want dinner to be part of a larger escape. Walk by the river, cross the covered bridge, settle into the warm dining room and order according to the season.
